2 cups vanilla Greek yogurt

1/2 cup strong brewed coffee, cooled

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 cup mini chocolate chips

1 1/2 cups granola (or your choice of cookie crumbs)

1/2 teaspoon sea salt

12 large chocolate chip cookies (store-bought or homemade)

Prepare the Yogurt Mixture: In a large bowl, combine the vanilla Greek yogurt, cooled brewed coffee, honey (or maple syrup), and vanilla extract. Whisk until the mixture is smooth and well incorporated.

    Add the Chocolate Chips: Gently fold in the mini chocolate chips, ensuring they are evenly distributed throughout the yogurt mixture.

      Layer the Sandwiches: Take one cookie, place a generous scoop (about 1/4 cup) of the yogurt mixture on the flat side, and then cover it with another cookie to form a sandwich. Repeat this with the remaining cookies and yogurt mixture.
