Ingredients

2 ripe mangoes, peeled and diced

1 cup plain Greek yogurt (or coconut yogurt for a dairy-free option)

1/4 cup honey or maple syrup (adjust to taste)

1/4 cup chia seeds

1/2 teaspoon vanilla extract

1/2 teaspoon lime juice

A pinch of salt

Optional toppings: shredded coconut, chopped nuts, or fresh mango slices

Instructions

Prepare the Mango Puree: In a blender, combine the diced mangoes and blend until smooth. You can leave a few small chunks for added texture if desired.

Mix Yogurt and Chia: In a large mixing bowl, whisk together the Greek yogurt, honey (or maple syrup), vanilla extract, lime juice, and a pinch of salt until well combined.

Incorporate Chia Seeds: Stir in the chia seeds to the yogurt mixture. Allow it to sit for about 5-10 minutes, so the chia seeds can absorb some moisture and expand slightly.

Combine Mixtures: Gently fold the mango puree into the yogurt mixture until well incorporated. Be careful not to overmix; you want to maintain some lovely marble patterns throughout.

Prepare the Pan: Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.

Pour and Smooth: Pour the mango-yogurt mixture into the prepared dish. Use a spatula to smooth the top evenly.

Optional Toppings: Sprinkle your desired toppings over the surface of the mixture if using. Press them down gently to help them adhere.

Freeze: Cover the dish with plastic wrap or a lid and place it in the freezer. Freeze for at least 4 hours, or until completely set.

Cut into Bars: Once frozen, lift the mixture out of the pan using the parchment paper overhang. Let it sit at room temperature for a few minutes for easier cutting, then slice into bars of your desired size.

Serve and Enjoy: Enjoy immediately, or store the bars in an airtight container in the freezer for up to two weeks.
