Frozen Yogurt Pecan Pie Rounds

Ingredients
  

1 cup pecans, toasted and chopped

1 cup Greek yogurt (plain or vanilla)

1/2 cup maple syrup

1/2 cup graham cracker crumbs

1/3 cup brown sugar

1 tsp vanilla extract

1/4 tsp cinnamon

1/8 tsp salt

1/4 cup melted coconut oil (or unsalted butter)

1/2 cup chocolate chips (optional)

Instructions
 

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, melted coconut oil, brown sugar, and a pinch of salt. Mix until fully combined and crumbly. Press the mixture into the bottom of a small muffin tin or silicone molds to form a crust. Chill in the freezer for about 10-15 minutes until firm.

    Make the Filling: In another bowl, mix together the Greek yogurt, maple syrup, vanilla extract, cinnamon, and a touch of salt until smooth. Fold in the chopped toasted pecans, reserving a small amount for garnish.

      Assemble the Rounds: Remove the crust from the freezer and spoon the yogurt mixture over the crusts, filling them up to the top. Smooth out the surface with a spatula.

        Add Chocolate (Optional): If you like, sprinkle some chocolate chips on top of each round for added richness.

          Freeze: Place the muffin tin back in the freezer and allow the rounds to freeze for at least 4 hours, or until completely solid.

            Serve: To serve, gently pull the frozen rounds out of the molds. You might need to run warm water over the outside of the molds for a few seconds to loosen them. Garnish with the reserved pecans or drizzle with a bit of maple syrup before enjoying!
