Ingredients

3 cups Rice Krispies cereal

1 cup mini marshmallows

1/2 cup creamy peanut butter

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup Greek yogurt (plain or flavored)

1/2 cup chocolate chips (dark or milk)

1/4 cup crushed nuts (like almonds or walnuts, optional)

Fresh fruit pieces (like strawberries or blueberries for topping, optional)

Instructions

Prepare Your Base: In a large mixing bowl, combine the Rice Krispies cereal with mini marshmallows.

Make the Binder: In a small saucepan over low heat, combine the peanut butter, honey (or maple syrup), and vanilla extract. Stir frequently until the mixture is smooth and well-blended, then remove from heat.

Mix Together: Pour the peanut butter mixture over the Rice Krispies and marshmallows. Stir until all the cereal is well-coated and the marshmallows are slightly melted. If you are adding nuts, fold them in gently at this stage.

Shape the Bites: Using a greased spatula or your hands (lightly moistened with water), press the mixture into a greased 8x8 inch square baking dish, ensuring it's evenly packed.

Freeze the Base: Place the dish in the freezer for about 30 minutes, or until the mixture is firm.

Create the Yogurt Layer: Once the base is solidified, remove it from the freezer, and cut it into bite-sized squares or rectangles.

Yogurt Coating: Dip each piece into the Greek yogurt, ensuring each bite is well-coated. You can use a fork for easy handling. Return the coated bites to a parchment-lined tray.

Add the Toppings: Before the yogurt sets, sprinkle chocolate chips or fresh fruit pieces on top of each coated bite for added flavor and decoration.

Final Freeze: Place the tray back into the freezer for an additional 1-2 hours until the yogurt is completely frozen.

Serve & Enjoy: Allow the bites to sit at room temperature for a couple of minutes before serving for easier enjoyment. Enjoy your Frozen Yogurt Rice Krispie Bites as a refreshing snack or dessert!
