4 salmon fillets (6 oz each)

3 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon fresh dill, chopped

1 teaspoon dried oregano

Juice of 1 lemon

Salt and pepper to taste

For the Creamy Couscous:

1 cup couscous

1 1/4 cups chicken or vegetable broth

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

1/2 teaspoon garlic powder

Salt and pepper to taste

1 tablespoon chives, finely chopped (for garnish)

Marinate the Salmon: In a bowl, mix together olive oil, minced garlic, parsley, dill, oregano, lemon juice, salt, and pepper. Place the salmon fillets in the marinade and let them sit for at least 20 minutes at room temperature or refrigerate for up to 1 hour.

    Cook the Couscous: In a medium saucepan, bring the chicken or vegetable broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
