2 medium-sized eggplants, sliced into 1/2-inch rounds

1 cup all-purpose flour

3 large eggs, beaten

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper, to taste

1 cup marinara sauce (store-bought or homemade)

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Olive oil, for drizzling

Instructions
 

Prepare the Eggplant:

    - Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

      - Sprinkle salt onto the eggplant rounds and let them sit for about 20-30 minutes to draw out moisture and bitterness. Rinse and pat dry.

        Set Up the Breading Station:

          - In three separate shallow dishes, place the flour in one, beaten eggs in another, and mix the breadcrumbs with garlic powder, Italian herbs, salt, and pepper in the third.
