1 cup polenta (cornmeal)

4 cups vegetable broth

1 cup grated Parmesan cheese (plus more for serving)

2 tablespoons unsalted butter

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a medium saucepan, bring the vegetable broth to a simmer over medium heat.

    Gradually whisk in the polenta, ensuring there are no lumps. Stir continuously for about 5 minutes as it thickens.

      Once the polenta has thickened, reduce the heat to low and stir in the grated Parmesan cheese, butter, garlic powder, dried herbs, salt, and pepper. Mix until everything is well combined and creamy.

        Spread the polenta mixture into a greased 9x9-inch baking dish, smoothing the top with a spatula. Allow it to cool for about 30 minutes, or until firm.

          Preheat your oven to 425°F (220°C).

            Once cooled and set, cut the polenta into squares or rectangles. Carefully place the squares on a baking sheet lined with parchment paper.

              Drizzle the polenta squares with olive oil and sprinkle with additional Parmesan cheese.

                Bake in the preheated oven for about 20-25 minutes, or until the edges are golden brown and crispy.

                  Remove from the oven and let cool for a few minutes. Garnish with fresh chopped parsley before serving.
