Grilled Chicken Caesar Pasta

8 oz. fettuccine or your preferred pasta

2 boneless, skinless chicken breasts

1 cup romaine lettuce, chopped

1/2 cup Caesar dressing (store-bought or homemade)

1/2 cup grated Parmesan cheese

1/2 cup croutons

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Fresh lemon wedges for serving (optional)

Fresh parsley or basil for garnish (optional)

Instructions
 

Marinate the Chicken: In a bowl, coat the chicken breasts with olive oil, garlic powder, salt, and pepper. Let it marinate for at least 30 minutes (or up to 2 hours in the fridge for more flavor).

    Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a small cup of pasta water.

      Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.

        Combine Pasta and Dressing: In a large mixing bowl, toss the cooked pasta with the Caesar dressing, adding a little reserved pasta water if needed to achieve your desired creaminess.

          Add Romaine and Chicken: Fold in the chopped romaine lettuce and sliced grilled chicken to the pasta. Mix until well combined.

            Serve: Plate the pasta and top with grated Parmesan cheese and croutons. Garnish with chopped parsley or basil if desired. Serve with lemon wedges on the side for an extra zing.
