Grilled Chicken Pineapple Kabobs

1 lb boneless, skinless chicken breast, cut into 1-inch cubes

1 ripe pineapple, peeled, cored, and cut into 1-inch chunks

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1 small red onion, cut into wedges

1/4 cup soy sauce

2 tbsp honey

2 tbsp olive oil

2 cloves garlic, minced

1 tsp ground ginger

1 tsp black pepper

Juice of 1 lime

Skewers (wooden or metal)

Marinate the Chicken: In a large bowl, whisk together the soy sauce, honey, olive oil, minced garlic, ground ginger, black pepper, and lime juice. Add the cubed chicken breast to the marinade and toss well to coat. Cover with plastic wrap and let marinate in the fridge for at least 30 minutes, ideally up to 2 hours for more flavor.

    Prepare Vegetables and Pineapple: While the chicken is marinating, prepare the vegetables and pineapple. Ensure all ingredients are cut into uniform 1-inch pieces for even grilling.

      Soak the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

        Assemble the Kabobs: Once the chicken is marinated, thread the chicken, pineapple, red bell pepper, green bell pepper, and red onion onto the skewers, alternating ingredients for a colorful display.

          Preheat the Grill: Preheat your grill to medium-high heat, around 400°F (200°C).

            Grill the Kabobs: Place the kabobs on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through (internal temperature of 165°F / 75°C) and has nice grill marks. Ensure the pineapple and vegetables are slightly charred as well.

              Serve: Remove the kabobs from the grill and let them rest for a few minutes. Serve warm, garnished with fresh cilantro and a lime wedge on the side if desired.
