Grilled Chicken Tacos

1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

3 tablespoons fresh lime juice

1 tablespoon orange juice

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

8 small corn tortillas

1 cup shredded red cabbage

1 avocado, sliced

1/2 cup fresh cilantro, chopped

1/2 cup crumbled feta or queso fresco (optional)

Lime wedges, for serving

Instructions
 

Marinate the Chicken: In a mixing bowl, whisk together the olive oil, lime juice, orange juice, minced garlic, cumin, chili powder, smoked paprika, salt, and pepper. Add the chicken thighs, ensuring they are well coated with the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

    Preheat the Grill: Prepare your grill for medium-high heat. If you’re using a grill pan, preheat it on your stovetop.

      Grill the Chicken: Remove the chicken from the marinade, letting excess drip off. Place the chicken on the grill and cook for about 6-7 minutes per side, or until the meat is no longer pink in the center and juices run clear. The internal temperature should reach 165°F (75°C). Once cooked, transfer the chicken to a cutting board to rest for a few minutes.

        Cook the Tortillas: While the chicken is resting, warm the corn tortillas on the grill for about 30 seconds on each side until they are pliable and slightly charred.

          Slice the Chicken: Once the chicken has rested, slice it into strips or bite-sized pieces.
