Grilled Corn & Tomato Salad

Ingredients
  

4 ears of fresh corn, husked

2 cups cherry tomatoes, halved

1 medium red onion, finely diced

1 cup fresh basil leaves, chopped

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 teaspoon honey

Salt and pepper to taste

1/4 cup crumbled feta cheese (optional)

Instructions
 

Preheat your grill to medium-high heat.

    Place the husked corn directly on the grill. Cook for about 10-15 minutes, turning occasionally, until the kernels are slightly charred. Remove from the grill and let cool.

      While the corn is cooling, in a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper. Set aside.

        Once the corn is cool enough to handle, use a sharp knife to cut the kernels off the cobs and place them in a large mixing bowl.

          Add the halved cherry tomatoes, diced red onion, and chopped basil into the bowl with the corn.

            Drizzle the prepared dressing over the mixture and gently toss to combine all the ingredients evenly.

              If desired, sprinkle the feta cheese on top and give the salad a final gentle toss.

                Allow the salad to sit for about 10 minutes before serving, letting the flavors meld together.
