2 large, grilled chicken breasts, diced

1 ripe avocado, mashed

1 cup roasted Hatch green chiles, chopped (adjust to your spice preference)

½ cup sour cream or Greek yogurt

1 teaspoon lime juice

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

4 large whole wheat or spinach tortillas

1 cup shredded lettuce

1 small tomato, diced

¼ cup fresh cilantro, chopped

Optional: ½ cup shredded cheese (Monterey Jack or cheddar)

Instructions
 

Prepare the Chicken: Grill or pan-sear your chicken breasts until fully cooked. Allow to cool, then dice into bite-sized pieces.

    Make the Avocado Spread: In a medium bowl, combine the mashed avocado, lime juice, garlic powder, onion powder, and a pinch of salt and pepper. Mix well until creamy and smooth. Set aside.

      Mix the Filling: In a large bowl, combine the diced chicken, chopped Hatch green chiles, sour cream, diced tomato, and fresh cilantro. Season with salt and pepper to taste. Mix until all ingredients are well incorporated.

        Assemble the Wraps: Lay out a tortilla on a flat surface. Spread a generous tablespoon of the avocado mixture over the surface. Add a portion of the chicken and chili mixture on top, followed by some shredded lettuce and cheese if desired.

          Roll the Wrap: Fold in the sides of the tortilla and tightly roll it from the bottom up to create a secure wrap. Repeat with remaining tortillas and filling.
