1 cup rolled oats

1/2 cup whole wheat flour

1/2 cup canned pumpkin puree

1/3 cup honey or maple syrup

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup dark chocolate chips or chopped nuts (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Stir well to ensure all dry ingredients are evenly mixed.

      Prepare Wet Ingredients: In another bowl, whisk together the canned pumpkin puree, honey (or maple syrup), melted coconut oil, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients, mixing gently until just combined. If you're adding chocolate chips or nuts, fold them in at this stage.

          Shape the Cookies: Using a tablespoon, scoop the dough and place it onto the prepared baking sheet, spacing them about 2 inches apart. Flatten them slightly with the back of the spoon for an even bake.

            Bake: Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. The centers may look slightly soft, which is normal as they will firm up while cooling.

              Cool Down: Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
