1 lb baby carrots (or peeled regular carrots, cut into equal-sized pieces)

3 tablespoons olive oil

2 tablespoons balsamic vinegar

2 tablespoons honey

1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)

Salt and pepper, to taste

4 oz feta cheese, crumbled

Fresh parsley, chopped for garnish (optional)

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Carrots: In a large bowl, toss the baby carrots with olive oil, balsamic vinegar, honey, thyme, salt, and pepper until evenly coated.
