2 boneless, skinless chicken breasts

1/4 cup honey

1/4 cup soy sauce

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon rice vinegar

1 teaspoon sesame oil

Salt and pepper to taste

For the Sandwiches:

4 pieces of flatbread (naan or pita work well)

1 cup fresh spinach

1 cup shredded carrots

1/2 cucumber, thinly sliced

1/4 red onion, thinly sliced

1/2 cup creamy feta cheese or humus (optional)

Fresh cilantro leaves for garnish

Sesame seeds for garnish

Instructions
 

Marinate the Chicken:

    - In a bowl, whisk together honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, salt, and pepper.

                - While the chicken rests, warm the flatbreads on the grill or in a skillet for about 1-2 minutes on each side until they are slightly toasted but still pliable.

                    - Lay flatbread on a clean surface; spread a thin layer of creamy feta or hummus on each piece if desired.

                      - Evenly distribute a layer of fresh spinach, shredded carrots, cucumber slices, and red onion on top.
