Lemon Ricotta Stuffed Shells with Basil

12 large pasta shells

1 cup ricotta cheese

1 cup fresh mozzarella, shredded

1/2 cup grated Parmesan cheese

Zest of 1 lemon

Juice of 1 lemon

1 cup fresh basil leaves, chopped

2 cups marinara sauce (store-bought or homemade)

2 cloves garlic, minced

1 teaspoon olive oil

Salt and pepper, to taste

Extra basil for garnish

Instructions
 

Cook the Pasta Shells: Bring a large pot of salted water to a boil. Add the pasta shells and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Filling: In a large mixing bowl, combine the ricotta cheese, half of the mozzarella, Parmesan cheese, lemon zest, lemon juice, chopped basil, minced garlic, salt, and pepper. Mix until well combined and set aside.

      Preheat the Oven: While preparing the filling, preheat your oven to 375°F (190°C).

        Stuff the Shells: Take each cooked shell and carefully spoon the ricotta mixture into it, filling each shell generously. Place the stuffed shells seam-side up in a greased 9x13 inch baking dish.

          Add Marinara Sauce: Pour the marinara sauce over the stuffed shells, ensuring they are all covered. Sprinkle the remaining mozzarella evenly on top.

            Bake the Dish: Cover the baking dish with aluminum foil and bake for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.

              Garnish and Serve: Once out of the oven, let the shells cool for a few minutes before serving. Garnish with extra fresh basil on top for a vibrant finish.
