Mango Black Bean Quinoa Salad

1 cup quinoa, rinsed

2 cups vegetable broth or water

1 can (15 oz) black beans, rinsed and drained

1 ripe mango, diced

1 red bell pepper, diced

1 small red onion, finely chopped

1 cup corn (fresh, frozen, or canned)

1 avocado, diced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

3 tbsp olive oil

1 tsp ground cumin

Salt and pepper to taste

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth (or water). Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed. Fluff with a fork and set aside to cool.

    Prepare the Dressing: In a small bowl, whisk together the lime juice, olive oil, ground cumin, and a pinch of salt and pepper. Adjust seasoning to taste.

      Combine Ingredients: In a large mixing bowl, combine the cooled quinoa, black beans, diced mango, red bell pepper, red onion, corn, and avocado.

        Mix in Dressing: Pour the dressing over the salad and gently toss until everything is well coated.

          Garnish and Serve: Fold in the chopped cilantro. Serve immediately or refrigerate for about 30 minutes to enhance the flavors.
