Mango & Shrimp Salad Bowl

For the Salad:

1 lb (450g) large shrimp, peeled and deveined

2 ripe mangoes, diced

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 bell pepper (red or yellow), diced

1 avocado, sliced

4 cups mixed greens (arugula, spinach, lettuce)

¼ cup red onion, thinly sliced

¼ cup fresh cilantro, chopped

For the Dressing:

3 tbsp olive oil

2 tbsp lime juice

1 tbsp honey

1 tsp Dijon mustard

Salt and pepper to taste

Prepare the Shrimp: In a skillet over medium heat, add a splash of olive oil. Season the shrimp with salt, pepper, and a pinch of paprika (optional). Cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque. Remove from heat and allow to cool slightly.

    Make the Dressing: In a small bowl, whisk together the olive oil, lime juice, honey, Dijon mustard, salt, and pepper until well-combined and emulsified.

      Combine the Ingredients: In a large salad bowl, toss together the mixed greens, diced mangoes, cherry tomatoes, cucumber, bell pepper, red onion, and chopped cilantro.

        Add the Shrimp: Once the shrimp have cooled, add them to the salad mixture.

          Dress and Serve: Drizzle the dressing over the salad and gently toss to combine. Top with slices of avocado for added creaminess.
