As the first light of dawn breaks through my kitchen window, the aroma of something delightful wafts through the air, stirring my senses and signaling the start of a new day. Mornings have a special magic to them, especially when they begin with a delicious breakfast that warms both the belly and the heart. One of my all-time favorite morning treats is a dish I lovingly call Sweet Sunrise Delight: Maple Cinnamon Roasted Breakfast Sweet Potatoes.

Maple Cinnamon Roasted Breakfast Sweet Potatoes

Ingredients
  

2 medium sweet potatoes, peeled and diced into 1-inch cubes

3 tablespoons olive oil

2 tablespoons pure maple syrup

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg (optional)

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1/4 cup chopped pecans

1/4 cup dried cranberries

Fresh parsley or thyme for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easier cleanup.

    Prepare the Sweet Potatoes: In a large mixing bowl, combine the diced sweet potatoes, olive oil, maple syrup, ground cinnamon, nutmeg (if using), sea salt, and black pepper. Toss everything together until the sweet potatoes are evenly coated.

      Spread on Baking Sheet: Transfer the sweet potato mixture to the prepared baking sheet, spreading them out in a single layer for even roasting.

        Roast the Sweet Potatoes: Place the baking sheet in the preheated oven and roast for 25-30 minutes, or until the sweet potatoes are tender and caramelized. Be sure to stir the potatoes halfway through cooking to ensure they roast evenly.

          Add Pecans and Cranberries: During the last 5 minutes of roasting, sprinkle the chopped pecans and dried cranberries over the sweet potatoes. This will allow them to slightly toast, enhancing their flavors.

            Garnish and Serve: Once roasted, remove the sweet potatoes from the oven and allow them to cool slightly. Transfer to a serving dish and garnish with fresh parsley or thyme if desired.
