2 large apples (preferably Honeycrisp or Fuji), cored and diced

1/4 cup pure maple syrup

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1 cup rolled oats

1/2 cup almond flour (can substitute with regular flour)

1/3 cup unsweetened shredded coconut

1/4 cup chopped walnuts or pecans (optional)

1 tablespoon coconut oil, melted

Pinch of salt

1/2 teaspoon vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare the Apples: In a mixing bowl, combine the diced apples with 2 tablespoons of maple syrup, ground cinnamon, and nutmeg. Toss until the apples are evenly coated.

      Make the Oat Mixture: In a separate bowl, mix the rolled oats, almond flour, shredded coconut, chopped nuts, melted coconut oil, salt, vanilla extract, and the remaining maple syrup. Stir until fully combined.

        Combine: Gently fold in the apple mixture into the oat mixture until all ingredients are well incorporated.

          Shape the Bites: Use a tablespoon to scoop the mixture and roll it into small bite-sized balls. Place them on the prepared baking sheet, spacing them about 1 inch apart.

            Bake: Bake in the preheated oven for 15-20 minutes, or until the bites are golden brown and fragrant.

              Cool and Drizzle: Remove from the oven and let them cool on the baking sheet for about 5 minutes. Drizzle with additional maple syrup if desired.
