2 large russet potatoes, peeled and shredded

1 cup shredded cheddar cheese

1/2 cup cooked and crumbled bacon (or your choice of protein)

1/4 cup green onions, finely chopped

2 large eggs, beaten

1/4 cup all-purpose flour

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

Cooking spray or a little oil for greasing the waffle iron

Instructions
 

Preheat the Waffle Iron: Set your waffle iron to medium-high heat and lightly grease with cooking spray or a brush of oil.

    Prepare the Potatoes: After peeling and shredding the potatoes, place them in a clean kitchen towel and squeeze out as much moisture as possible. This step prevents soggy waffles.

      Mix Ingredients: In a large mixing bowl, combine the shredded potatoes, cheddar cheese, crumbled bacon, green onions, beaten eggs, flour, garlic powder, onion powder, salt, and pepper. Stir well until all ingredients are evenly mixed.

        Cook the Waffles: Scoop about 1/4 cup of the potato mixture onto the preheated waffle iron, spreading it gently to make a mini disc. Close the lid and cook for about 5-7 minutes, or until the disks are golden brown and crispy. Repeat with the remaining potato mixture.

          Serve: Carefully remove the waffle disks from the iron and place them on a serving platter. They are delicious served warm with sour cream, hot sauce, or a side of fresh fruit.
