Ingredients

2 ripe avocados

1 cup cooked chicken breast, shredded (grilled or roasted)

1/4 cup Greek yogurt (or mayonnaise, for a creamier texture)

1 tablespoon Dijon mustard

1/4 cup diced celery

1/4 cup diced red onion

1/4 cup chopped fresh cilantro or parsley

1 tablespoon lime juice

Salt and pepper, to taste

Optional: cherry tomatoes, halved (for garnish)

Instructions

Prepare the Avocados: Cut the avocados in half and remove the pits. Carefully scoop out a little bit of the flesh to create a larger cavity for the chicken salad, but be sure to keep the skin intact for serving.

Make the Chicken Salad: In a mixing bowl, combine shredded chicken, Greek yogurt, Dijon mustard, diced celery, red onion, cilantro or parsley, and lime juice. Mix well until all ingredients are thoroughly combined. Season with salt and pepper to taste.

Fill the Avocado Boats: Spoon the chicken salad mixture into each avocado half, generously filling the cavity.

Garnish: If desired, add halved cherry tomatoes on top of the chicken salad for an added burst of color and flavor.

Serve: Arrange the filled avocado boats on a platter and serve immediately for a fresh and delicious appetizer or light meal.
