1 pound boneless, skinless chicken thighs

1 tablespoon olive oil

1 teaspoon taco seasoning

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

12 mini taco shells

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup salsa

Fresh cilantro for garnish (optional)

Prepare the Chicken: In a bowl, combine the chicken thighs, olive oil, taco seasoning, garlic powder, onion powder, salt, and pepper. Mix well to coat all the chicken pieces.

    Cook the Chicken: Heat a skillet over medium-high heat. Add the seasoned chicken and cook for about 6-8 minutes on each side, or until cooked through and golden brown. Remove the chicken from the skillet and let it rest for a few minutes before dicing into small pieces.

      Warm the Taco Shells: While the chicken rests, preheat your oven to 350°F (175°C). Place the mini taco shells on a baking sheet and warm them in the oven for about 5 minutes, until they are slightly crunchy.
