¼ cup milk

½ teaspoon salt

¼ teaspoon black pepper

1 cup shredded cheddar cheese

1 small bell pepper, diced (any color)

¼ cup diced onion

½ cup diced cooked ham or cooked bacon (optional)

4 slices of whole grain bread

1 tablespoon olive oil

Fresh herbs for garnish (like chives or parsley), optional

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a muffin tin by either greasing it with non-stick spray or lining with silicone muffin liners for easy removal.

    Prepare the Egg Mixture: In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Stir in the shredded cheddar cheese, diced bell pepper, onion, and optional ham or bacon.

      Toast the Bread: While the oven is heating, use a cookie cutter or a small glass to cut your bread slices into rounds. Heat the olive oil in a skillet over medium heat, and lightly toast both sides of each bread round until golden brown. This will help prevent the bread from becoming soggy when the egg mixture is added.

        Assemble in Muffin Tin: Place the toasted bread rounds in the greased muffin tin, pressing them gently to create a ‘cup’ for the egg mixture. Fill each bread round evenly with the egg mixture, leaving a little room at the top as the eggs will puff slightly when baking.
