2 large Russet potatoes

1 cup elbow macaroni

1 cup shredded sharp cheddar cheese

1/2 cup milk

1/4 cup cream cheese, softened

1/4 cup grated Parmesan cheese

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

1 tablespoon butter

1 tablespoon olive oil

Fresh parsley, finely chopped (for garnish)

Optional: crispy bacon bits or breadcrumbs for topping

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Wash and scrub the Russet potatoes. Cut them in half lengthwise and scoop out the insides with a spoon, leaving about 1/4 inch of potato around the skin to create a shell. Reserve the scooped potato flesh for later.

      Cook the Macaroni: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain and set aside.

        Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Add the reserved scooped potato flesh and mash it lightly. Stir in the milk and cream cheese until smooth. Add the garlic powder, onion powder, salt, and pepper to taste. Gradually stir in the shredded cheddar cheese and grated Parmesan until completely melted and creamy.

          Combine Macaroni and Cheese: Add the cooked macaroni to the cheese sauce, stirring until well combined.

            Fill the Potato Cups: Drizzle the potato halves with olive oil and season with a little salt and pepper. Place them cut side up in a baking dish. Using a spoon or a small scoop, fill each potato cup generously with the mac and cheese mixture.

              Top as Desired: If you like, sprinkle crispy bacon bits or breadcrumbs on top for added crunch.

                Bake: Place the filled tater cups into the preheated oven and bake for 20-25 minutes, or until the tops are golden and the edges of the potatoes are crispy.
