Ingredients

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup buttermilk

1/4 cup unsalted butter, melted

1 large egg

8 breakfast sausage links, cooked and sliced

1 cup shredded cheddar cheese (optional)

Maple syrup for drizzling

Fresh chives, chopped (for garnish)

Instructions

Preheat the Waffle Iron: Start by preheating your waffle iron according to the manufacturer's instructions. It's important your waffle iron is hot for a perfect crisp.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.

Combine Wet Ingredients: In another bowl, whisk together the buttermilk, melted butter, and egg until fully combined.

Fold Ingredients Together: Pour the wet ingredients into the dry ingredients, and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

Prepare the Waffle Iron: Lightly grease the preheated waffle iron with cooking spray or a small amount of melted butter to prevent sticking.

Cook the Waffles: Pour about 1/4 cup of the biscuit batter onto the hot waffle iron. If using, sprinkle a little cheddar cheese on top before closing the lid. Cook until the waffles are golden brown and crispy (about 3-5 minutes). Repeat this step until all the batter is used.

Assemble the Stacks: Once you have your mini waffles, take one waffle and layer with a few slices of cooked sausage. Top with another waffle, and repeat to create a mini stack. You can stack 2-3 waffles with sausage to your preference.

Drizzle and Serve: Drizzle maple syrup over the top of the stacks and sprinkle chopped chives for a fresh touch. Serve immediately while they're warm and crispy!
