1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1 teaspoon ground cumin

1/2 teaspoon cayenne pepper (adjust to taste)

1 cup milk

1/3 cup vegetable oil

2 large eggs

1 cup shredded cheddar cheese

1 cup corn kernels (fresh, frozen, or canned)

1/2 cup chopped jalapeños (fresh or pickled)

1/4 cup chopped fresh cilantro (optional)

1/2 cup diced red onion

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Grease a 9-inch round cake pan or line it with parchment paper for easy removal.

    Mix Dry Ingredients: In a large mixing bowl, combine the cornmeal, flour, baking powder, salt, ground cumin, and cayenne pepper. Whisk these ingredients together until well blended.

      Prepare Wet Ingredients: In a separate bowl, whisk together the milk, vegetable oil, and eggs until fully combined and slightly frothy.

        Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix—some lumps are okay.

          Fold in Add-Ins: Gently fold in the cheddar cheese, corn kernels, jalapeños, cilantro, and red onion. This will give the cornbread its signature Tex-Mex flavor.

            Bake: Pour the batter into the prepared pan, spreading it evenly. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

              Cool and Slice: Once out of the oven, allow the cornbread to cool in the pan for about 10 minutes. Turn it out onto a wire rack to cool further if desired. After cooling, cut the cornbread into wedges.
