Ingredients

1 block (14 oz) firm tofu, pressed and cubed

1 tablespoon olive oil

2 tablespoons soy sauce

1 tablespoon hoisin sauce

1 teaspoon sesame oil

1/2 teaspoon garlic powder

1/2 teaspoon ground ginger

1/4 teaspoon crushed red pepper flakes (optional)

1 cup red bell pepper, finely diced

1 cup carrot, grated

1/2 cup green onions, sliced

1 cup cooked quinoa (optional)

1 head of butter lettuce or romaine, leaves separated

Chopped fresh cilantro for garnish

Lime wedges for serving

Instructions

Prepare the Tofu: After pressing the tofu to remove excess moisture, cut it into small cubes (about 1/2 inch). This helps them achieve a nice crispy texture when cooked.

Marinate the Tofu: In a medium bowl, combine the soy sauce, hoisin sauce, sesame oil, garlic powder, ground ginger, and crushed red pepper flakes. Add the cubed tofu and gently toss to coat. Let the tofu marinate for 15-30 minutes for added flavor.

Cook the Tofu: Heat olive oil in a non-stick skillet over medium-high heat. Once the oil is hot, add the marinated tofu cubes. Cook for about 5-7 minutes, turning occasionally, until the tofu is golden brown and crispy on all sides. Remove the skillet from heat.

Prepare the Veggies: In a large bowl, mix the cooked quinoa (if using), diced bell pepper, grated carrot, and sliced green onions. Toss to combine and create a colorful filling mixture.

Assemble the Bowls: Take a lettuce leaf and place a spoonful of the quinoa and veggie mixture in the center, followed by several pieces of the crispy tofu. Add fresh cilantro on top for an aromatic lift.

Serve: Serve your Mini Tofu Lettuce Wrap Bowls with lime wedges on the side. Squeeze fresh lime juice over the filling just before eating for a zesty finish.
