Ingredients

1 medium zucchini, finely grated

1 cup shredded Mexican cheese blend (cheddar, Monterey Jack, or similar)

4 small flour tortillas (6-inch size)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper (optional)

Salt and pepper, to taste

2 tablespoons fresh cilantro, chopped (optional)

1 tablespoon olive oil or cooking spray for greasing

Salsa and sour cream for serving (optional)

Instructions

Prepare the Zucchini:

    - Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture to prevent soggy quesadillas.

      Mix the Ingredients:

        - In a mixing bowl, combine the grated zucchini, shredded cheese, garlic powder, onion powder, cayenne pepper (if using), salt, pepper, and cilantro. Mix well to combine.

          Assemble the Quesadillas:

            - Lay one tortilla flat on a clean surface. Spoon a generous amount of the zucchini and cheese mixture onto one half of the tortilla, leaving some space around the edges. Fold the tortilla over to create a semicircle. Press down gently to seal.

              Cook the Quesadillas:

                - Heat a non-stick skillet over medium heat and lightly grease it with olive oil or cooking spray. Place the folded quesadilla in the skillet and cook for 3-4 minutes on each side, or until golden brown and crispy, and the cheese is melted.

                  Cut into Mini Circles:

                    - Once cooked, remove the quesadilla from the skillet and let it cool slightly. Use a cookie cutter or sharp knife to cut out small circles (about 2-3 inches in diameter) from the quesadilla.

                      Serve:

                        - Arrange the mini quesadilla circles on a platter and serve warm with salsa and sour cream on the side for dipping.
