Ingredients

1 cup graham cracker crumbs

1/4 cup unsweetened cocoa powder

1/3 cup melted coconut oil

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

2 ripe bananas, sliced

1 cup dark chocolate chips

1 tablespoon coconut milk (or heavy cream)

A pinch of sea salt

Optional toppings: crushed nuts, shredded coconut, or mini chocolate chips

Instructions

Prepare the Base: In a mixing bowl, combine the graham cracker crumbs, cocoa powder, melted coconut oil, honey (or maple syrup), and vanilla extract. Mix until the ingredients are well combined and form a crumbly texture that sticks together when pressed.

Mold the Cups: Line a muffin tin with paper liners. Take about 2 tablespoons of the crumb mixture and press it firmly into the bottom of each muffin cup to create a base. Use your fingers or a small cup to ensure it’s well compacted.

Add Banana Slices: Once the bases are prepared, place a layer of banana slices on top of each cup. Aim for about 2-3 banana slices per cup, making sure to cover the entire surface.

Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut milk. Heat in the microwave in 20-second intervals, stirring in between, until the chocolate is fully melted and smooth.

Top with Chocolate: Using a spoon, carefully pour the melted chocolate over the banana slices in each cup, spreading it evenly to cover the bananas completely. If desired, sprinkle a pinch of sea salt on top for a flavor boost.

Chill and Set: Place the muffin tin in the refrigerator for at least 1-2 hours to allow the chocolate to harden and the cups to set.

Serve: Once set, gently remove the cups from the muffin tin and peel off the liners. Serve chilled and garnish with your choice of toppings like crushed nuts, shredded coconut, or mini chocolate chips for added texture.
