12 mini graham cracker cups or 12 small cups for serving

Fresh mint leaves (for garnish)

Lemon slices or zest curls (for garnish)

Prepare the Base: In a large mixing bowl, pour in the heavy whipping cream. Using an electric mixer, whip the cream on medium-high speed until soft peaks form, about 3-4 minutes.

    Combine the Ingredients: In a separate bowl, whisk together the sweetened condensed milk, freshly squeezed lemon juice, lemon zest, vanilla extract, and salt until fully combined and smooth.

      Fold Together: Gently fold the whipped cream into the lemon mixture in three additions. Be careful not to deflate the whipped cream too much; you want the mixture to remain light and airy.
