Peach Glazed Tuna

2 fresh tuna steaks (about 6 oz each)

2 ripe peaches, pitted and diced

1/4 cup peach preserves

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 teaspoon fresh ginger, grated

1 garlic clove, minced

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro or basil leaves for garnish (optional)

Lime wedges for serving

Instructions
 

Prepare the Marinade: In a small bowl, combine the peach preserves, soy sauce, rice vinegar, grated ginger, and minced garlic. Stir until well mixed.

    Marinate the Tuna: Place the tuna steaks in a shallow dish and pour half of the peach glaze over them. Turn the steaks to ensure they are evenly coated. Cover and refrigerate for at least 30 minutes to let the flavors penetrate.

      Prepare the Peaches: In a separate bowl, toss the diced peaches with a pinch of salt and a splash of lime juice. Set aside.

        Preheat the Grill or Pan: Heat a grill or grill pan over medium-high heat. Drizzle olive oil over the grates to prevent sticking.

          Cook the Tuna: Remove the tuna from the marinade and season lightly with salt and pepper. Place on the hot grill and cook for about 2-3 minutes on each side for medium-rare, or longer if you prefer it cooked through. Brush the remaining marinade on the steaks during the last minute of cooking.

            Prepare the Peach Glaze Sauce: In a small saucepan, heat the remaining marinade over medium heat. Let it simmer for 2-3 minutes until it thickens slightly, then remove from heat.

              Assemble the Dish: Once the tuna is cooked, remove it from the grill and let it rest for a minute. Slice the tuna steaks diagonally and plate them. Top with the fresh diced peaches and drizzle the warm peach glaze over all.

                Garnish and Serve: Optionally, garnish the dish with fresh cilantro or basil leaves, and serve with lime wedges on the side for an extra zesty flavor.
