Pineapple Chicken Burrito Bowls

2 cups cooked brown rice

1 lb boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon ground cumin

Salt and pepper to taste

1 cup fresh pineapple chunks (or canned, drained)

1 cup black beans (drained and rinsed)

1 cup corn (fresh, frozen, or canned)

1 red bell pepper, diced

½ red onion, finely chopped

1 avocado, diced

½ cup fresh cilantro, chopped

Juice of 1 lime

Optional toppings: sour cream, shredded cheese, jalapeños, hot sauce

Instructions
 

Prepare the Chicken: In a mixing bowl, combine olive oil, garlic powder, onion powder, smoked paprika, ground cumin, salt, and pepper. Add the chicken breasts and coat them evenly in the spice mixture. Let marinate for at least 20 minutes (or overnight in the fridge for deeper flavor).

    Cook the Chicken: In a skillet over medium heat, cook the marinated chicken breasts for about 6-7 minutes on each side, or until the chicken is fully cooked and no longer pink in the center (internal temperature should reach 165°F). Remove from heat and let it rest for 5 minutes before slicing into strips or cubes.

      Prepare the Bowls: While the chicken is cooking, prepare the rest of the ingredients. In a large bowl, combine black beans, corn, diced red bell pepper, chopped red onion, fresh pineapple chunks, and cilantro. Squeeze lime juice over the mixture and toss to combine.
