Roasted Garlic Herb Chicken Thighs

4 bone-in, skin-on chicken thighs

1 head of garlic

2 tablespoons olive oil

2 teaspoons fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

Juice of 1 lemon

1 tablespoon balsamic vinegar

½ cup chicken broth

Fresh parsley for garnish

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Garlic: Cut the top off the head of garlic to expose the cloves, drizzle with a little olive oil, wrap it in aluminum foil, and place it in the oven to roast for about 30-35 minutes.

      Season the Chicken: While the garlic is roasting, in a small bowl, mix together the olive oil, rosemary, thyme, oregano, paprika, salt, pepper, lemon juice, and balsamic vinegar.

        Prep the Chicken Thighs: Pat the chicken thighs dry with paper towels. Rub the herb mixture generously all over each thigh, including under the skin for maximum flavor.

          Arrange in a Baking Dish: Once the garlic is done roasting, remove it from the oven and increase the temperature to 450°F (232°C). Place the seasoned chicken thighs in a baking dish. Pour the chicken broth around the thighs.

            Add Roasted Garlic: Squeeze the roasted garlic cloves out of their skins and spread them over the chicken thighs.

              Roast the Chicken: Roast the chicken in the oven for 35-40 minutes or until the skin is golden brown and crispy, and the internal temperature reaches 165°F (74°C).

                Rest and Serve: Remove the chicken from the oven and let it rest for about 5 minutes. Garnish with freshly chopped parsley before serving. Enjoy with your favorite sides!
