Roasted Tomato and Zucchini Gratin

4 medium-sized tomatoes, sliced

2 medium zucchinis, sliced

1 cup grated mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup breadcrumbs (preferably panko for extra crunch)

3 cloves garlic, minced

2 tablespoons fresh basil, chopped (or 1 tablespoon dried basil)

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

2 tablespoons extra-virgin olive oil

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Baking Dish: Lightly grease a 9x13 inch baking dish with olive oil.

      Layer the Vegetables: Begin by arranging half of the sliced zucchini on the bottom of the prepared dish. Follow this with half of the sliced tomatoes.

        Season the Layers: Sprinkle half of the minced garlic, half of the basil, and thyme over the zucchini and tomatoes. Season lightly with salt and pepper.

          Repeat Layers: Repeat the layering process with the remaining zucchini, tomatoes, garlic, basil, and thyme.

            Add Cheese: Evenly distribute the grated mozzarella and Parmesan cheese over the top.

              Breadcrumb Topping: In a small bowl, combine breadcrumbs with a drizzle of olive oil and a pinch of salt. Mix well and sprinkle this mixture over the cheese.

                Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly.

                  Cool and Serve: Allow the gratin to cool for about 5 minutes before serving. Garnish with extra fresh basil if desired.
