For the Salmon:

1 lb salmon fillet (skinless)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

½ teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

Juice of 1 lime

For the Cherry Slaw:

2 cups red cabbage, finely shredded

1 cup fresh cherries, pitted and roughly chopped

½ cup carrots, julienned

¼ cup cilantro, chopped

3 tablespoons honey

2 tablespoons apple cider vinegar

1 tablespoon lime juice

Salt to taste

For Assembling:

8 small corn tortillas

Avocado slices (optional)

Lime wedges (for serving)

Extra cilantro for garnish (optional)

Instructions
 

Prepare the Salmon:

    - Preheat your grill or skillet over medium-high heat.

      - In a small bowl, mix together olive oil, smoked paprika, garlic powder, cumin, cayenne pepper, salt, black pepper, and lime juice.

        - Coat the salmon fillet evenly with the spice mixture.

          - Grill or pan-sear the salmon for about 6-8 minutes per side, or until cooked through and easily flaked with a fork. Once done, remove from heat and let it rest for a few minutes.

            Make the Cherry Slaw:

              - In a large mixing bowl, combine the shredded red cabbage, chopped cherries, julienned carrots, and chopped cilantro.

                - In a separate small bowl, whisk together the honey, apple cider vinegar, lime juice, and a pinch of salt. Pour the dressing over the slaw mixture and toss until everything is well coated. Set aside to marinate while you prepare the tacos.

                  Prepare the Tortillas:

                    - Heat the corn tortillas on the grill or in a skillet for about 30 seconds on each side until warm and pliable.

                      Assemble the Tacos:

                        - Flake the grilled salmon into bite-sized pieces.

                          - On each warmed tortilla, add a portion of the flaked salmon followed by a generous scoop of cherry slaw.
