1 tablespoon olive oil or coconut oil

1 medium onion, chopped

3 cloves garlic, minced

4 cups vegetable broth

1 can (14 oz) coconut milk

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon turmeric

Salt and black pepper, to taste

Juice of 1 lime

Fresh cilantro, for garnish

Sauté Aromatics: In a large pot, heat the olive oil or coconut oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and grated ginger. Cook for an additional 1-2 minutes until fragrant.
