Ingredients
  

1 cup broccoli florets

1 cup cauliflower florets

1 cup diced bell peppers (mix of red, yellow, and orange)

1 cup sliced carrots

1 medium red onion, cut into wedges

3 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 teaspoon smoked paprika

Salt and freshly ground black pepper to taste

Juice of 1 lemon

Fresh parsley, chopped, for garnish

Instructions
 

Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easier cleanup.

    In a large bowl, combine the broccoli, cauliflower, bell peppers, carrots, and red onion.

      In a small bowl, whisk together the olive oil, minced garlic, rosemary, thyme, smoked paprika, salt, and pepper until well combined.

        Pour the herb and oil mixture over the vegetables in the large bowl. Toss everything together until all the veggies are evenly coated in the herb mixture.

          Spread the seasoned vegetables out in a single layer on the prepared baking sheet. Ensure they aren’t overcrowded for optimal roasting.

            Roast in the preheated oven for about 25-30 minutes, or until the vegetables are tender and golden brown, stirring halfway through for even cooking.

              Once removed from the oven, drizzle with lemon juice and give a gentle toss. Adjust seasoning with more salt and pepper if needed.
