1 lb ground turkey

2 cups fresh spinach, chopped

8 large eggs

1/2 cup milk (dairy or non-dairy)

1 cup shredded cheddar cheese

1 small onion, diced

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

Cooking spray or olive oil for greasing the baking dish

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or olive oil and set aside.

    Cook the Turkey: In a large skillet over medium-high heat, add the ground turkey. Cook for about 5-7 minutes, breaking it up with a spatula until fully browned and no longer pink. Drain any excess fat.

      Add Aromatics: Add the diced onion and minced garlic to the skillet with the turkey. Sauté for another 3-4 minutes until the onion is translucent and fragrant.

        Incorporate Spinach: Stir in the chopped spinach and continue cooking for 2-3 minutes until wilted. Remove from heat.

          Whisk Eggs: In a large mixing bowl, whisk together the eggs, milk, oregano, salt, black pepper, and red pepper flakes, if using.

            Combine Ingredients: Add the turkey and spinach mixture to the bowl with the egg mixture. Gently fold in the shredded cheddar cheese.
