1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 teaspoon red pepper flakes (adjust to taste)

1 tablespoon soy sauce

1 tablespoon lime juice

Salt and pepper to taste

For the Peach Glaze:

2 ripe peaches, pitted and diced

1 tablespoon honey (or maple syrup for a vegan option)

1 tablespoon rice vinegar

1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)

1 teaspoon sesame oil

Pinch of salt

For Assembling:

1 head of iceberg lettuce or butter lettuce, leaves separated

1 cup shredded carrots

1 red bell pepper, thinly sliced

¼ cup chopped fresh cilantro

Lime wedges for serving

Prepare the Peach Glaze: In a small saucepan over medium heat, combine the diced peaches, honey, rice vinegar, and a pinch of salt. Cook, stirring occasionally, until the peaches break down and soften (about 5-7 minutes).

    Make the Slurry: In a separate small bowl, mix cornstarch with water until smooth. Add the slurry to the peach mixture and stir until it thickens (this should take about 2-3 minutes). Stir in sesame oil and set aside.

      Cook the Shrimp: In a large skillet, heat olive oil over medium-high heat. Add minced garlic and ginger, sauté for about 30 seconds until fragrant. Add the shrimp and season with red pepper flakes, soy sauce, lime juice, salt, and pepper. Cook for about 3-4 minutes or until shrimp turn pink and are cooked through.

        Choose Your Lettuce: While the shrimp is cooking, prepare the lettuce leaves by rinsing them under cold water and patting them dry. Use whole leaves to serve as wraps.
