Shrimp Tacos with Blueberry Slaw

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

Juice of 1 lime

For the Blueberry Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 cup fresh blueberries

1/4 cup carrots, grated

1/4 cup red onion, thinly sliced

2 tablespoons mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon honey

Salt and pepper to taste

For the Tacos:

8 small corn tortillas

Fresh cilantro, for garnish

Lime wedges, for serving

Prepare the Shrimp: In a medium bowl, combine olive oil, minced garlic, chili powder, cumin, smoked paprika, salt, and black pepper. Toss the shrimp in the mixture until they are evenly coated. Squeeze lime juice over the shrimp and let them marinate for about 15 minutes.

    Make the Blueberry Slaw: In a large bowl, combine the green cabbage, red cabbage, blueberries, grated carrots, and red onion. In a small bowl, whisk together mayonnaise, apple cider vinegar, honey, salt, and pepper. Pour this dressing over the slaw mixture and toss until well combined. Adjust seasoning if needed and set aside.

      Cook the Shrimp: Heat a skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for about 2-3 minutes on each side until the shrimp are pink and opaque. Remove from heat.

        Warm the Tortillas: In a separate dry skillet over medium heat, place the corn tortillas one by one, heating them for about 30 seconds on each side, until they are warm and pliable.
