Shrimp Tacos with Lemon Slaw

1 pound shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon cumin

Salt and pepper to taste

8 small corn tortillas

1 cup red cabbage, finely shredded

1 cup green cabbage, finely shredded

1/2 cup carrots, grated

1/4 cup fresh cilantro, chopped

Juice of 2 lemons

2 tablespoons honey

1/4 cup Greek yogurt or sour cream (optional)

Avocado slices, for serving

Lime wedges, for serving

Prepare the Shrimp: In a mixing bowl, combine the shrimp with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper. Toss until fully coated. Let marinate for about 15 minutes while you prepare the slaw.

    Make the Lemon Slaw: In a large bowl, combine the red cabbage, green cabbage, grated carrots, and chopped cilantro. In a separate small bowl, whisk together the lemon juice, honey, and a pinch of salt. Pour the lemon dressing over the slaw mix and toss until well combined. Taste and adjust seasoning if necessary.

      Cook the Shrimp: Heat a non-stick skillet over medium-high heat. Once hot, add the marinated shrimp. Cook for about 2-3 minutes on each side, or until the shrimp are pink and cooked through. Remove from heat.

        Warm the Tortillas: In the same skillet, briefly warm each corn tortilla until soft and pliable, about 15-20 seconds on each side.

          Assemble the Tacos: Place a small portion of shrimp in the center of each warm tortilla. Top with a generous amount of lemon slaw, a dollop of Greek yogurt or sour cream (if using), and avocado slices.
