Spicy Chicken Fajita Pasta Bake

8 oz penne pasta

1 lb boneless, skinless chicken breasts, diced

1 medium onion, sliced

1 bell pepper (red or green), sliced

2 cloves garlic, minced

1 tsp chili powder

1 tsp cumin

1/2 tsp smoked paprika

1/2 tsp oregano

1/4 tsp cayenne pepper (adjust for spice level)

1 can (14 oz) diced tomatoes, undrained

1 cup chicken broth

1 cup corn (canned or frozen)

1 cup shredded cheddar cheese

1 cup sour cream

Salt and pepper to taste

Fresh cilantro (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

      Sauté the Chicken: In a large skillet over medium heat, add a tablespoon of oil. Once hot, add the diced chicken. Season with salt, pepper, chili powder, cumin, smoked paprika, oregano, and cayenne pepper. Cook until the chicken is completely cooked through and browned, about 7-8 minutes. Remove from skillet and set aside.

        Sauté Vegetables: In the same skillet, add a bit more oil if needed, then add the sliced onion and bell pepper. Sauté until softened, about 5 minutes, then add minced garlic and cook for an additional 1-2 minutes.

          Combine Ingredients: In a large mixing bowl, combine the cooked pasta, chicken, sautéed vegetables, diced tomatoes (with juice), chicken broth, corn, and sour cream. Mix until well combined. Taste and adjust seasoning with salt and pepper as needed.

            Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch baking dish. Spread it evenly and sprinkle the shredded cheddar cheese on top.

              Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden on top.
