1 large cucumber (English cucumber works well)

1 cup sushi-grade tuna, finely diced

2 tablespoons mayonnaise (preferably Kewpie for extra creaminess)

1 tablespoon Sriracha (adjust to taste)

1 teaspoon sesame oil

1 teaspoon soy sauce

1/2 avocado, sliced thinly

1 tablespoon green onions, finely chopped

1 tablespoon black sesame seeds (for garnish)

Sea salt (to taste)

Pickled ginger (for serving)

Soy sauce (for dipping)

Instructions
 

Prepare the Cucumber: Start by washing the cucumber. Cut off both ends, then use a vegetable peeler or a mandoline to peel long strips of cucumber, or slice it in half lengthwise and scoop out the seeds with a spoon to create a hollow tube. If you prefer more bite, keep the peel on.

    Make the Spicy Tuna Filling: In a medium bowl, combine the finely diced tuna, mayonnaise, Sriracha, sesame oil, soy sauce, and a pinch of sea salt. Mix well until all ingredients are thoroughly combined. Taste and adjust the spice level, adding more Sriracha if desired.

      Assemble the Rolls: Lay a strip of cucumber flat on a cutting board or a sushi mat. Place a spoonful of the spicy tuna mixture along one edge of the cucumber strip. Add a slice of avocado and a sprinkle of green onions just above the tuna mixture.

        Roll It Up: Carefully roll the cucumber strip from the end with the filling, creating a tight roll. Use a little pressure to keep everything together but be gentle to avoid tearing the cucumber.
