2 cups rolled oats

1/2 cup dried cranberries

1 large apple, peeled and diced (I recommend a Honeycrisp or Granny Smith)

1/4 cup chopped walnuts (optional)

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

2 cups almond milk (or milk of your choice)

1/4 cup pure maple syrup (adjust to taste)

1 large egg (or flax egg for a vegan option)

1 teaspoon vanilla extract

Fresh apple slices and extra cranberries for topping (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish or a similar sized oven-safe dish.

    Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, dried cranberries, diced apple, chopped walnuts (if using), cinnamon, nutmeg, and salt. Stir until well mixed.

      Mix Wet Ingredients: In another bowl, whisk together the almond milk, maple syrup, egg, and vanilla extract until well incorporated.

        Combine Mixtures: Pour the wet mixture over the dry oat mixture and stir until everything is fully combined. Let the mixture sit for about 10 minutes so the oats can soak up some liquid.
