Sweet Chili Salmon Lettuce Wraps

1 lb (450g) salmon fillet, skinless and boneless

3 tablespoons sweet chili sauce

2 tablespoons soy sauce

1 tablespoon lime juice

1 teaspoon grated ginger

1 tablespoon sesame oil

1 garlic clove, minced

8 large butter lettuce leaves (or romaine lettuce)

1 cup shredded carrots

1 cup cucumber, julienned

½ cup red bell pepper, thinly sliced

¼ cup green onions, chopped

1 tablespoon sesame seeds (for garnish)

Fresh cilantro leaves (for garnish, optional)

Instructions
 

Prep the Salmon: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Place the salmon fillet on the sheet and season it lightly with salt.

    Make the Marinade: In a small bowl, whisk together the sweet chili sauce, soy sauce, lime juice, grated ginger, sesame oil, and minced garlic until well combined.

      Marinate the Salmon: Pour half of the marinade over the salmon fillet. Allow it to marinate for at least 15 minutes (or up to an hour if you have the time).

        Bake the Salmon: Bake the salmon in the preheated oven for about 12-15 minutes, or until it flakes easily with a fork. Baste with more marinade halfway through cooking for extra flavor.

          Prepare the Lettuce Wraps: While the salmon is baking, wash and dry the lettuce leaves. Arrange them on a serving platter.

            Construct the Wraps: Once the salmon is cooked, allow it to cool slightly before flaking it into large pieces. Lay out some shredded carrots, cucumber, and red bell pepper in each lettuce leaf.

              Add Salmon: Top with the flaked salmon and drizzle with the remaining marinade. Sprinkle with chopped green onions and sesame seeds.

                Garnish & Serve: Add fresh cilantro leaves if desired for an added burst of flavor. Serve the lettuce wraps immediately, allowing everyone to fold and enjoy their own!
