2 cups fresh sweet corn kernels (or 1 can of sweet corn, drained)

1 cup shelled edamame (fresh or frozen, thawed)

1 red bell pepper, diced

1 medium cucumber, diced

1/4 red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 avocado, diced

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon honey (or agave syrup for a vegan option)

Salt and pepper to taste

Optional: 1/4 teaspoon chili flakes for heat

Prepare Ingredients: If using fresh corn, bring a pot of water to a boil and cook the corn kernels for about 5 minutes. If using frozen edamame, boil them for 3-4 minutes. Drain and set aside to cool.
