8 rice paper wrappers

1 ripe mango, peeled and sliced into thin strips

1 cup cooked jasmine rice, cooled

1 medium cucumber, julienned

1 cup shredded carrots

1 avocado, sliced

1/4 cup fresh mint leaves

1/4 cup fresh basil leaves

1/4 cup chopped cilantro

1/4 cup toasted coconut flakes (optional)

1/2 cup hoisin sauce (for dipping)

1 tablespoon sesame oil (optional)

Instructions
 

Prepare the Fillings: Set all your ingredients within reach on a clean work surface. This will make the rolling process smoother.

    Soak the Rice Paper: Fill a large shallow dish with warm water. Dip one rice paper wrapper into the warm water for about 10-15 seconds until it softens but is still slightly firm. Carefully transfer to your work surface.

      Layer the Ingredients: Place a small amount of jasmine rice in the center of the wrapper, then layer with a few strips of mango, cucumber, shredded carrots, avocado slices, and a few leaves of mint, basil, and cilantro. If desired, sprinkle some toasted coconut flakes on top for added flavor and texture.

        Roll It Up: Fold the sides of the rice paper over the filling, then starting from the bottom, gently roll it up tightly (but not so tight that it tears) to secure the filling inside. Repeat this process with the remaining wrappers and fillings.
