2 medium sweet potatoes, peeled and diced

2 medium apples (such as Honeycrisp or Granny Smith), cored and diced

1 bell pepper (any color), diced

3 cloves garlic, minced

½ teaspoon ground nutmeg

Salt and pepper, to taste

2 tablespoons olive oil

3 large eggs (optional)

Fresh parsley or chives for garnish

Prepare the Ingredients: Begin by peeling and dicing the sweet potatoes into small cubes, as well as coring and chopping the apples. Set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and bell pepper, sautéing until they are soft, about 4-5 minutes.

      Cook the Sweet Potatoes: Add the diced sweet potatoes to the skillet. Season with salt, pepper, cinnamon, and nutmeg. Stir well to combine and cover the skillet with a lid. Cook for 10-12 minutes, stirring occasionally, until the sweet potatoes are tender.
