Sweet Potato Black Bean Tacos

2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, rinsed and drained

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and pepper, to taste

8 small corn or flour tortillas

1 avocado, sliced

1 cup cherry tomatoes, halved

½ cup red onion, diced

½ cup fresh cilantro, chopped

Juice of 1 lime

Optional toppings: crumbled feta cheese, sour cream, hot sauce

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Roast Sweet Potatoes: In a large bowl, toss the diced sweet potatoes with olive oil, cumin, smoked paprika, chili powder, salt, and pepper until evenly coated. Spread them out on a baking sheet in a single layer.

      Roast in the oven for 20-25 minutes, or until the sweet potatoes are tender and slightly caramelized, flipping halfway through.

        Prepare Black Beans: While the sweet potatoes are roasting, heat a small saucepan over medium heat. Add the drained black beans and season with salt, pepper, and a squeeze of lime juice. Stir occasionally until heated through, about 5-7 minutes.

          Warm Tortillas: Once the sweet potatoes and black beans are ready, warm the tortillas. You can do this by placing them in a dry skillet over medium heat for about 30 seconds on each side or wrapping them in foil and warming them in the oven for a few minutes.
